Layered Enchilada Casserole

As I mentioned on my IG {@messinthemidwest} I feel so guilty when I work nights and I leave my husband to fend for himself. Again, he CAN cook but he works so hard for us and everything we have, he deserves a great meal every night! This recipe is a super easy and not very time consuming!

You'll Need;
-1lb of ground turkey.
-Taco seasoning. {I make my own. Link -> Taco Seasoning}
-1-2 tomatoes, diced.
-1 small green pepper, diced.
-1/2 white onion, diced.
-Tortilla's, I usually use whole wheat, but we only had regular. Also I used small sized tortilla's.
-Mexican shredded cheese.
-1 can enchilada sauce
-Baking pan, size depending on how many you are feeding and how many layers you want. I used my meatloaf pan, ended up with 3 layers.

Process;
-Brown ground turkey.
-While browning add in tomatoes, green pepper, and onion.
-Drain grease, there shouldn't be much if you're using lean meat. Most of the juice if from the veggies.
-Add taco seasoning.
-Preheat over to 350 degree's.
-Spray pan.
-Layer bottom with tortilla.
-Add ground turkey mix, pour some enchilada sauce, and sprinkle with shredded cheese.
-Reapeat last two steps until out of ground turkey and tortilla's.
-Pour last of enchilada sauce on top and cover with cheese.
-Bake for 20 minutes and you're done!
