On the Go Breakfast Burritos!



So if your life is anything like mine, there is no time for breakfast! Unless you want to wake up a half hour earlier, but let's face it, that extra thirty minutes of sleep is so worth being starved til lunch! Or you might be like my husband who feels sick if he eats too early in the morning. Well I have found a solution; breakfast burritos! No, not those yucky store bought ones that are way over priced with all the artificial flavors and processed ingredients or McDonald's breakfast burritos (let's be honest we don't know what's in those!) I'm talking home-made, healthy, inexpensive breakfast burritos!

What you'll need;
(What I used, feel free to add or subtract any toppings!)

  • Whole wheat tortilla's (10 medium)
  • 12 eggs (Farm fresh if you can)
  • 1 bag of Fit and Active shredded cheddar cheese
  • 1 green pepper
  • 3 mushrooms
  • 1 pack of turkey bacon or turkey sausage

This takes a little time to make such a big amount, but you will be so thankful in the morning!

  • Cut up green pepper, mushrooms, and anything you want in your burrito
  • Cook turkey bacon or sausage (when using bacon must crumble when cool)
  • Drain any grease
  • Mix eggs in a bowl with a splash of (skim) milk
  • Cook scrambled eggs
  • Half way through cooking them throw in sausage or bacon with all toppings
  • Let cool then add too tortilla (I used about half a cup in each burrito)
  • Sprinkle cheese
  • Roll up and wrap in plastic wrap
  • Then fit in gallon size zip lock bag
  • and freeze!

It took about 45 minutes to an hour to do everything, the cooling and plastic wrap takes the longest! Mitch was gone fishing, otherwise I would have had some help! So easy this morning, no surprise I was running late, I popped one in the microwave this morning when I got to work for about 1 min 30 sec and it was fabulous! No more stomach growling all morning! I'm sure my clients and co-workers appreciate it! And my bank account really appreciates not spending money going to the drive thru! All of this was less than $20! Breakfast for a week for two people, compare that to the drive thru for two people! You're saving half your money, at least! Plus saving those calories :)
