Stuffed Chicken Breast

I had left over stuffing from my stuffed mushrooms and I didn't want to waste it, plus I needed to find something more than just a few stuffed mushrooms for dinner! For some reason chicken came to mind! And boy was I right! It was delish!

What you'll need;
  • 2 chicken breast
  • The extra stuffing (cream cheese, shredded cheese, and bacon bits)
  • 1 cup Panko crumbs (or regular bread crumbs)
  • 1 egg
  • 1 cup flour
  • Any other seasoning you want

The process;
  • Preheat oven to 425 degrees
  • Defrost the two chicken breast
  • Then cut the fat end to make a "pocket" in your chicken breast
  • Stuff with stuffing (I just used my hands)
  • Coat with flour
  • Then dip in egg
  • Coat with panko crumbs
  • Put olive oil in skillet and brown all sides of chicken (I cook mine pretty crispy)
  • I also added some Mrs. Dash chicken seasoning
  • Then place in glass pan and cook in oven for about 20-30 minutes (once again, I eyeball a lot of the food I cook)

Wa La! Stuffed chicken breast! It was some of the best chicken I have ever made! I am seriously getting hungry just by talking about it! I'm sorry I don't have more pictures to help, it was a last minute thing! If you have any questions, feel free to ask!
