I am horrible with noodle/sauce ratio. The other day I whipped up some spaghetti just for myself and husband and I made enough for at least four plus left overs! Only noodles, the sauce was enough for us two and his lunch the next day. That's how bad I am! So with lots of extra left over noodles I was determined to come up with a way to use them without making more spaghetti! So I came up with enchilada pasta! You can't tell me that doesn't sound delish!
What you'll need;
12oz bag of noodles
1 pack taco seasoning
1 can black beans
1 large onion
1 large pepper
1 can of rotel
2 cups shredded cheese
1 can enchilada sauce
Process;
Preheat oven to 350
Cook noodles & drain
Put noodles in a baking dish
Cut chicken as small as you can
Chop onion and pepper
Drain rotel & black beans
Mix in skillet until chicken in cooked through
Then add to baking dish noodles our in
Add can of enchilada sauce and cheese
Stir and place in oven for 30 minutes!
Finally something new! And it didn't take all that long to cook with plenty left over to spare! Husband approved too! Can also be made with ground beef, we just chose chicken. Hope you enjoy! :)
