What you'll need;
-3-5 green peppers, depending on desired size.
-1lb ground turkey
-1 cup homemade salsa (can use 1 can rotel)
-1/2 cup frozen corn
-taco seasoning (1 pkt should work, I use my own mix and just eyeball though)
-1/2 yellow onion chopped
-1 cup shredded cheese
Process;
-Mix all ingredients in a bowl
-Cut top of peppers off and clean out inside
-Stuff the mix inside the peppers
-Fill crockpot with 1 cup water
-Place in peppers, and cook on high for 4-6 hours or on low for 8-10!
I cooked up the extra meat for my hubby to make nachos for his lunch tomorrow! Enjoy, friends! :)
Now your peppers are ready right out of the crockpot, but I chose to do a little more! I cut all the peppers in half, placed on a baking sheet, drizzled ketchup (I swear I am not crazy! You can barely taste the ketchup, just gives a nice tang), sprinkled shredded cheese, and then baked until cheese was melted at 350°!
